I'm a real oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of them yet? (? They're some of the most well-known recipes on my site because they taste very sweet and comfy, exactly like traditional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!

Immediate oats are thinner and smaller than conventional rolled oats, and you can see them in canisters right alongside those old-fashioned oats at the grocery store.
I probably seem like a broken record by now... But because I ? you and also want your cookies to flip out totally plump and soft, I am reminding you ... Measure your flour and oats correctly, using this method or even a kitchen scale! (? That is the one I own and adore. It only cost $20!) See those bananas? And all those brown stains? If it comes to baking bananas, brown = beautiful! I ? extra speckly bananas because they have a lot bright, bold flavor--and also extra sweetness! That's the minimum quantity of brown that I suggest. More is better!

The raisins add much more sweetness! The recently purchased, extra plump, perfectly tender ones are ideal... But for those who have old, slightly dried out raisins (hmm... it sounds absurd to explain dried fruit as dried outside! ) , that is fine!
Only add them to some microwave-safe bowl, and pour water on top until they're totally coated. Seal plastic wrap across the surface, and then microwave the bowl on high for 1 minute. Should you let the peppers sit mixing together the cookie dough, then this little hint hydrates them so they're exceptionally succulent --and that makes a huge difference in these cookies as soon as they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
These oatmeal biscuits are soft, chewy, and full of banana flavor! The familiar comfy spices and plump raisins make these much more irresistible. They'll keep for at least one week if stored in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (gluten-free if necessary and quantified like that )
3/4 cup (90g) whole wheat or fermented * flour (measured like this)
1 1/2 teaspoon baking powder
1/4 teaspoon salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the yogurt, pasta, baking powder, cinnamon, and salt. Add the flour mixture, stirring only until incorporated. Allow the cookie dough rest for 10 minutes.
Using a spoon and spatula, drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten to the desired thickness and width using The Best Healthy Cookie Recipes Shape Magazine a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to measure both the oats and flour properly utilizing this technique or even a kitchen scale. (? That is the one I have and enjoy!) Too much of either would dry from the cookies and abandon them cakey instead of chewy.
